Lowcarbman's Creamy Jello:
zap 1 cup water in the microwave
stir in 2 packets Knox Gelatine (0 carbs)
stir in 1 packet KoolAid (many great flavors, pink lemonade is my favorite - 0 carbs)
add 2 cups cool water
stir in 1/3 cup DaVinci Vanilla Syrup (0 carbs)
stir in 1/4 tsp Stevia (liquid or powder or 1 cup equivalent sweetener, 0 carbs)
stir in 2/3 cup heavy cream (4 carbs)
cool 2 hrs, mix up again (cream tends to rise to the top)
This makes 4 cups of creamy jello and best of all, NO ASPARTAME.
-----
1 packet unflavored gelatin
1/4 cup boiling water
1 12-oz. can of sugar-free soda
Sprinkle gelatin over water in small saucepan. When softened, stir over low heat until gelatin is dissolved. Remove from heat and add soda. Pour into 2-cup bowl and refrigerate until set.
I've done this with cola and added a little DaVinci chocolate... fizzy chocolate jello! I've also done it with root beer... add a little whipped cream, and you've got a jello root beer float!
The flavor settles to the bottom a little if you put it all in one bowl... a stir about half way through would probably take care of it. Or try setting it in individual servings.

Gelatin ala DaVinci
from LowCarbLuxury
Combine in a shallow dish:
· 2/3 cup water
· 2 packages Knox unflavored gelatine
Stir to mix. Allow to sit for 5 minutes.
Combine in a large measuring cup or small bowl:
· 1 cup DaVinci Gourmet Sugarfree Splenda sweetened syrup
(pick your flavor!)
· 1 cup water
· 1/2 teaspoon lemon juice
Microwave until almost boiling. Pour hot syrup mix into softening gelatine and stir well.
Place syrup/gelatine mixture in microwave and heat an additional 2 to 3 minutes. Remove from microwave and stir well, being careful to stir all the way to the bottom of the bowl. Repeat heating and stirring for 5 to 8 minutes (until ingredients are completely mixed.) Add lemon juice and stir again.
Allow to cool until it reaches room temperature. Refrigerate for 6 to 8 hours. Enjoy!
Finished gelatine will be less "clear" than commercial Jell-O Brand. Feel free to boost colors when using syrups that are not heavily colored, with plain liquid food coloring.
