Peter Peter Pumpkin Bars

1/2 cup shortening
1 cup packed brown sugar
2 eggs
2/3 cup canned pumpkin
1 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon ground cinnamon
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1/2 cup chopped walnuts
Orange Frosting:
3 tablespoons shortening
2 1/4 cups confectioner's sugar
3 tablespoons orange juice
1 tablespoon grated orange peel
candy pumpkins

In a large mixing bowl, cream shortening and brown sugar. Add eggs, one at a time, beating well after each addition. Beat in pumpkin and vanilla.
Combine flour, cinnamon, baking powder, baking soda, ginger and nutmeg. Add to creamed mixture and mix well. Stir in nuts.
Spread into greased 13 x 9" baking dish.
Bake at 350º for 20-25 minutes or until toothpick inserted near center comes out clean. Cool on a wire rack.
In a mixing bowl, beat shortening, confectioners' sugar, orange juice and orange peel until blended.
Frost bars. Cut into squares. Top with candy pumpkins.
 
PUFFED FRENCH TOAST The Crystal Palace
2 whole eggs
2-1/2 T. sugar
1/2 tsp. salt
1/2 tsp. vanilla extract
2 c. milk
1 c. flour
2-1/2 tsp. baking powder
12 slices Texas style toast, cut in half diagonally
cinnamon sugar mix (4 tsp. cinnamon + 3/4 c. granulated sugar)

Mix eggs, sugar, salt, vanilla, and milk until blended. Slowly add flour and baking powder; mix until smooth. Dip bread in batter. Fry in hot skillet with 1" oil until browned. Drain on paper towels; roll in sugar mix.

Walt Disney's Oatmeal Cookies

2 cups flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon baking powder
3/4 teaspoon cinnamon
1 1/3 cups butter
1 1/4 cups sugar
3/4 cup brown sugar
2 large eggs
2 tablespoons water
1/2 teaspoon vanilla
2 1/2 cups uncooked oatmeal
1 1/4 cups raisins

In medium bowl, combine flour, salt, baking soda, baking powder and cinnamon. Set aside.
Cream butter in very large bowl.
Beat in sugars. Beat in eggs, 1 at a time. Add water and vanilla and mix until well blended, about 4 minutes. Mix oats, raisins and flour mixture into sugar mixture and stir until thoroughly blended.
Drop by large tablespoons onto ungreased baking sheet.
Bake at 350 degrees 9 to 14 minutes, or until light-brown in color. Cool on baking sheet before removing from pan.

Spiced Pumpkin Pancakes

2 tablespoons sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
1 3/4 cups milk
1 cup canned pumpkin
2 large eggs
2 tablespoons oil

In a bowl mix flour, sugar, baking powder, baking soda, cinnamon, nutmeg and salt.
In another bowl beat to blend milk, pumpkin, eggs and oil. Add flour mixture and stir until just blended.
 
Mine is all boxed up and ready to go. It will go out in tomorrow's mail!!

Spiced Pumpkin Seeds

INGREDIENTS:
1 1/2 tablespoons margarine,
melted
1/2 teaspoon salt
1/8 teaspoon garlic salt 2 teaspoons Worcestershire
sauce
2 cups raw whole pumpkin
seeds

DIRECTIONS:
1. Preheat oven to 275 degrees
2. Combine the margarine, salt, garlic salt, Worcestershire sauce and pumpkin seeds. Mix thoroughly and place in shallow baking dish.
3. Bake for 1 hour, stirring occasionally.

I am going on a field trip tomorrow with my daughters preschool class to the cider mill to pick pumpkins and apples so I thought I would dig out my pumpkin seed recipe.

Both of my exchanges are pack up and ready to go! If it stops pouring rain I will run to the post office this afternoon, if not I will go after the field trip tomorrow.

Tonga Toast

Amount Measure Ingredient -- Preparation Method

2 slices sourdough bread -- cut 1 to 1 1/2" thick
1 banana
1/3 cup sugar
1 teaspoon cinnamon
1 egg
1/4 cup milk
1/2 teaspoon vanilla
oil or shortening for frying
whipped butter and/or syrup

Cut a 1-inch pocket in one side of each bread slice.
Cut banana in half crosswise, then split each piece lengthwise.
Remove peel and stuff 2 pieces of fruit in each pocket of bread. Set aside.
Mix sugar and cinnamon. Set aside. Mix well the egg, milk and vanilla.
Heat about 4 inches of oil in a pan to 350 degrees.
Dip stuffed bread into egg/milk mixture and let it soak a few seconds to let penetrate bread.
Fry bread on both sides in hot oil until lightly browned, about 3 minutes.
Drain on paper towels or wire rack.
Sprinkle with cinnamon sugar and serve.

2 cups rolled oats
2 cups semisweet chocolate chips
1 cup unsalted butter -- softened to room temperature
1 cup firmly packed dark brown sugar
1/2 cup sugar
1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 cup unsweetened cocoa, preferably Hershey's
Premium European-Style
1 tablespoon milk
1 1/2 teaspoons pure vanilla extract
2 large eggs -- slightly beaten
9 ounces white chocolate preferably Lindt Swiss
White
1 1/2 tablespoons solid vegetable shortening

Preheat oven to 350 degrees F. Butter 2 cookie sheets. Do not alter the order in which the ingredients are combined.
In a large bowl, combine the oats and chocolate chips. Set aside.
In another large bowl, beat together the butter and sugars until creamy.
Sift together the flour, baking soda, salt, and cocoa, then add to the butter mixture, stirring until thoroughly combined. The batter will be very stiff.
Stir the milk and vanilla into the eggs, then stir this mixture into the butter mixture until thoroughly combined. Add the chips and oats. Stir until well mixed.
Using a two-tablespoon scoop, drop batter 2 inches apart on cookie sheets.
Bake 9 to 12 minutes, until cooked through. Cool on pan 1 minute. Transfer to wire racks to cool completely.
Melt the white chocolate with the solid vegetable shortening in the top of a double boiler over simmering water.
Holding a cooled cookie between your thumb and forefinger, dip the edge into the warm white chocolate to cover the top third of the cookie. Place on a rack over wax paper to dry completely.
Store between layers of wax paper in an airtight container in a cool place.
