I use the $10 daily plan with Verizon. It's something that you don't have to turn off once it's on your plan. When you land in a foreign country you'll get a welcome text saying that the plan is active. If you use your data, you get charged the $10 for that 24 hour period, if you don't use it, no charge.
There's no activation fee or anything like that so it's super simple. You even get a notice when your 24 hour period is about up so you can know not to use it anymore if you want to avoid another day's worth of charges.
Then, just keep your phone on wifi only for the entire trip until you absolutely need to use it. As others have said, there's a ton of good apps out there for free like WhatsApp. We also use facetime, imessage, facebook messaging, etc, all on wifi.
