Hoping to setup an ADR to be done around 8:15 to get setup for fireworks. Is 1 hour 15 minutes about right (ADR at 7)?

For just pizza that should be plenty of time.

We did have some time wasted when our poor server was trying to figure out everyone's dining plan separate checks (we had a big group), but since no dining plan, shouldn't be an issue!

Timing could be tight. Sometimes you might wait past your ADR. I’d order the pizza and ask for the bill as soon as you sit down.

The few times we've eaten there were at lunch, but it took a good while before we were seated and another to get our food.

Would agree the timing could be tight.
Our last trip, last fall, we were seated quickly, but the service was very slow.
If you can't get an earlier ADR, then I would know ahead of time what you want and put your order in as soon as th server comes over to take your drink order.
