Here's my tried and true recipe.
Mints
3 ounces cream cheese
1/2 tsp mint flavoring
2 1/2 c powdered sugar
Food coloring--a drop or two goes a long way (may need a little more powdered sugar if you add too much)
Mix ingredients together.
Knead by hand until stiff like pie dough.
Be sure to get color worked through the dough if you add food coloring.
Make small balls and roll in granulated sugar.
Put in mold and even off the bottom.
When set, remove from mold and dry on wax paper.
Freeze between layers of wax paper if you won't be using within a few days.
Be sure to get the right molds. They are rubbery, not the hard plastic.
