Just took pumpkin spice muffins out of the oven (added chocolate chips to some....everything is better with chocolate ).
Used the last two eggs. We leave Sunday.

I picked up a Meyer lemon cake box mix from Trader Joe’s. I love lemon but worried it would taste artificial. It wasn’t bad. The cake was kind of bland (if I made it again I would add some zest) but the glaze/frosting had good lemon flavor.

While it’s not baking I made and canned 12 jars of pasta sauce.

Friday I baked Double Chocolate (Gluten free) cookies and Sugar Cookies for our family lunch yesterday

I made ricotta for the first time. It was surprisingly easy and seemed fancier than it was when I served it.

I made home made shortcake for strawberry shortcake. I love the home made kind the best, but my husband only eats the store bought ones. You know,the ones that are 3 inches round! Oh well, I have that delicious shortcake all to myself
