In theory, you could do this. It would be a horrible hassle, but you basically have testing stations, everyone needs to check-in at one by a certain time in the morning. You get a colored sticker for your KTTW card (which is used for room key, payment, etc, so you pretty much always keep it on you and they could require you to wear it on a lanyard). Different color each day. Then if a crew member sees you around without the current colored sticker, you get escorted to a testing station. They also would scan in everyone as tested so they know who they need to track down.Rapid testing would work well in the theme parks, but on a multi day cruise trip, you'd have to test everyone every day. Those rapid tests can't pick up people in the early stage of the infection and may show a negative result, followed by a positive one a day or 2 later. Not sure how they would enforce daily testing on a cruise ship.
Or they bring Magicbands to the cruise ships. You have to scan whenever leaving the "residential" areas. It turns green if you've gone to testing that day, blue if not. That's what they have been doing for the NBA bubble. They have to scan whenever they enter or leave their hotel building.
